Title: Boston Baked Beans
Yield: 12 servings
Soak beans overnight in cold water
Simmer in same water ~1-2 hours until tender. Drain and reserve liquid.
Cook and crumble bacon
Finely mince onion
Preheat oven to 325F
Arrange beans in 4 quart casserole or bean pot by layering beans, bacon, and onion.
Bring remaining ingredients to boil in a saucepan and pour over beans. Add just enough reserved water to cover beans.
Add cover to bean crock or cover dish with aluminum foil and bake for 1.5-2 hours.
Remove lid, continue to bake for an additional 1.5-2 hours until beans are tender. Add more liquid as necessary.
