Title: Chocolate Souffle
Yield: 4 servings
Preheat oven to 325
Begin melting the butter in a double boiler
Separate the eggs and place the whites in a mixing bowl
Add 1 tbs sugar to egg whites
Lightly beat the yolks and add 1 cup milk
Mix the flour and sugar together
When the butter is melted, add the chocolate chips and stir until liquid
Gradually add the sugar and flour mixture to thicken, continue to heat the chocolate mixture to keep it from clumping.
Gradually add the milk/yolk mixture to thin, again keeping it over the heat
Use an electric mixer on high to beat the egg whites until fluffy, occasionally stirring the chocolate mixture over heat.
Add the chocolate mixture and stir thoroughly.
Add vanilla to the mixture.
Spoon/pour the frothy portion into four 8 oz ramekin, discard any liquid at the bottom.
Bake at 325 for approximately 30 minutes.
