Title: Enchilada Sauce
Yield: 3 cups
Cooking time: 10 minutes
Preparation time: 15 minutes
Heat oil in pan over medium-high heat.
Place flour and taco seasoning into bowl.
Place tomato sauce and other ingredients into another bowl.
Add flour and taco seasoning to oil and reduce heat to medium. Stir constantly until lightly browned.
Stir in tomato sauce mixture gradually. Once complete cook for approximately 10 minutes or until slightly thickened.
Makes about enough for four enchiladas.
For enchiladas add filling (pulled pork and cheese works well), wrap tortilla, cover with sauce, add additional cheese to the top (a side of refried beans works well), and bake at 350F for about 25 minutes.
