Title: French Onion Soup
Yield: 4 servings
Preheat oven to broil.
Coarsely chop onion and finely mince garlic.
Melt butter in saucepan over medium heat.
Sauté onions, garlic, bay leaf, thyme, salt, and pepper until onions are tender (about 10-30 minutes depending on how soft you like them).
Add red wine and simmer until gone, stirring frequently (about 10-15 minutes).
Discard bay leaf and add flour. Reduce heat to medium low and cook for about 10 minutes.
Add beef and chicken broth and return to simmer for about 10 minutes.
Option 1: Slice baguette and place on baking sheet. Place a slice of cheese over each. Broil baguette slices until cheese is browned and bubbly.
Option 2 (preferred): Ladle out soup into oven-safe crocks, place the bread in the soup and the choose over the bread. Broil crocks until cheese is browned and bubbly.
