Title: San Francisco Sourdough Bread
Mix liquid culture with 1 cup flour and 1/2 cup water in a mixing bowl. Proof at room temperature for 12 hours or at 85F for 6 hours.
Add scant 1/2 cup flour to the original culture and enough water to maintain consistency. Proof at room temperature for 2 hours and replace in refrigerator.
Add 1 cup flour and 1/2 cup water and mix until smooth. Proof at room temperature for 8 hours or at 85F for 4 hours.
Punch down. Dissolve salt in 1 cup of water and mix into the dough. Mix and knead four cups of flour into the dough.
Proof loaf at room temperature for 3-4 hours.
Preheat oven to 375F and bake for 40-45 minutes. Remove and cool on wire racks.
